Chocolate Mint
Tastes like a Peppermint Patty. Distinct hint of chocolate flavor and
aroma. If you are a coffee lover, place a sprig in the bottom of your mug and
pour hot coffee over it and let steep for a few minutes. Great stuff!

A spreading perennial mint. This mint likes sun and
well drained soil. It's great for teas and drinks.
Mint with a lime twist! We like this one in a gin and tonic! A

Pineapple Mint is a variegated hybrid of Apple Mint with white or cream blotches on its leaves. It does have a slight Pineapple scent, but the aroma isn't always detectable if growing conditions are less than ideal. This Mint is good for garnishes because the thick leaves are slow to wilt. Pineapple mint leaves make a good addition to pot pourris, particularly those with a fruity scent, such as a mix of lemon verbena, apple mint and other herbs with similar scents. Pineapple Mint should be used fresh because it has little culinary value when dried.

This hardy perennial is a very robust grower. Apple Mint has
interesting light green leaves. They are somewhat hairy on the upper surface
and downy underneath, with serrated edges. They can grow up to 3 feet high,
but may be kept lower.
Grow Apple Mint in full sun to light shade. Feed them heavily in late summer
to guarantee healthy growth the following spring. Apple Mint will survive in
dry soil, but will do much better in moist, fertile ground. Cut back or mow
down the Mint patch 2 or 3 times a year to encourage fresh growth. Cut the
stems even with the ground and throw out the long, woody stems. Strip off and
dry whole leaves for potpourris. Save the top 2 to 3 sets of leaves for fresh
use and garnishes. Apple Mint's fragrance may vary in strength; the mild apple
flavor doesn't sustain well in dried leaves.

Pennyroyal

English pennyroyal is an old-fashioned medicinal plant. It's used
primarily as an insect repellent today.
Pennyroyal's
low-growing habit, and dense, rounded (penny-shaped!) leaves make it an
excellent ground cover. It will reach 4-6" when it blooms its attractive
lavender flowers, but will otherwise remain pretty compact. Pennyroyal will
naturalize if given plenty of moisture, some light shade, and moderate

CULTURE:
Almost too easy to grow! Plant mints in moist, fertile soil in sun to light shade. Space plants 3 feet apart in sunken containers to slow down their spread. Pinch growing tips to promote branching. Water to keep the soil evenly moist and fertilize lightly to encourage maximum flavor. Cut back to the ground and mulch over winter in Zones 5 and below for Pennyroyal. Others are hardy into zone 3.
Harvest sprigs just before flowering or as needed.
The Marvel Of Mints
A few of many uses
Use the foliage fresh, frozen, or dried in teas, candied treats, or as flavoring for peas, lamb, potatoes, and other foods.
Mint Jelly can be used instead of mint sauce, in the same manner as red currant jelly. It may be made by steeping mint leaves in apple jelly, or in one of the various kinds of commercial gelatin. The jelly should be a delicate shade of green. A handful of leaves should color and flavor about half a pint of jelly. Strain the liquid through a jelly bag to remove all particles of mint before allowing to set.
Mint Vinegar is made as follows: Fill a jar or bottle with young mint leaves picked from the stalks. Cover with cold vinegar and cork or cover the bottle. Infuse for 14 days, then strain off the vinegar.
This vinegar is sometimes employed in making Mint Jelly, as follows:
Take 1 pint of water, 1 1/4 OZ. gelatin, the white and shell of an egg, 1/2 gill of Mint Vinegar, 1 dessertspoonful of Tarragon Vinegar, a bunch of herbs, 1 onion, 1 carrot, a stick of celery, 10 peppercorns, salt, 1 lemon. Peel the lemon very thinly, slightly whip the white of egg, wash and crush the shell. Put all the ingredients into a pan, strain in the juice of the lemon and whisk over the fire until just on boiling point. Boil up, then draw the pan to the side of the fire and simmer very gently for 20 minutes. Strain through a jelly bag until clear. Put into a mould to set. If liked, finely chopped mint may be added to the jelly after straining it, or more mint can be used and no Tarragon Vinegar.
To make Mint Punch: Pick a quart of fresh mint leaves, then wash and dry them by shaking them in a clean kitchen towel. Put them into a large jug and mash them with a wooden spoon till soft, when cover with freshly boiled water and infuse for ten minutes. Strain, cool, then set on ice till required. Add two cups of chilled grape juice and strained lemon juice to taste. Sweeten with castor sugar, stir till sugar is dissolved and then add a quart of ginger ale. Fill each tumbler to one-third with cracked ice and fill up with the punch.
Rodents dislike Peppermint
Mint has a piquant aroma and as such is disliked by much of the insect world. Above all, plant mint close to all brassicas and it will repel the Cabbage White Butterfly and a sprig or two in your wardrobe will keep moths out of your clothes.
Nature's Remedy: It has a remarkable reputation with indigestion, for calming the nerves, for soothing sleep and recurring sickness. Many herbalists claim it aids virility and can be used against Migraine. Pour 1 cup of boiling water over 1 tablespoonful of chopped fresh leaves and leave to stand for 30 minutes. Take as required a tablespoon at a time.
